Now I see what you mean.
I think these are what in typography are referred to as "Fleurons" - ornamental borders and decorations based on flowers, vine leaves etc.

With regard to "stealing" the images from a book: are they copyrighted? If not, I wouldn't feel bad about it - you'll find that a good proportion of Photoshop brushes available on the web are made from images scanned-in from books or other similar sources. At least this way you'd be making your own brushes, rather than just downloading some pre-made ones.
To remove the white background, make sure your scanned image is on a layer in Photoshop. Select the
Magic Wand tool and ensure that the
Contiguous option is
not checked. Click anywhere there is a patch of white background to select it. (If you have CS3, you might want to tweak the selection with the
Refine Edge option.) Press
Delete to remove the white background and then select
Edit >
Define Brush Preset... to save it as a brush.
