I can't agree with you more, I'm amazed that such a good quote hasn't been posted before.
One thing i've realised is that I may know what I want to do with the program and get the results that I want commercially but I don't use maybe 80% of the menus for the work I do. Photoshop is a sophisticated tool that is designed to work for so many different people and their particular field of work. I think it would take a lifetime to fully understand everything that
PS can do (not including upgrades).
My advice would be to consider what you want to do in terms of design and then learn the aspects of
PS that will enable you to fulfil those. Being self taught is, as far as I'm concerned a good thing, in fact it allows you to create new ideas without the stigma of tradition.... As Tamlin touched upon, if you want to train people to use
PS then you do need to know a bit about everything..... but not much about anything in particular.. If however you want to do it as a career then find what you like the most, or are most adept at and gun it 'til you know everything you need to know (use online resources rather than the manual), you'll have a portfolio before you know it and that's what counts.
