Is there a way to reset everything back to defaults? Because somehow whenever I click on something to move it, it has the free transform thing on the image. Also when I type text, its so tiny you can't even see it, and when I zoom in, its the free transform thing again, and I have to use it to stretch the text so I can actually see it.

To reset Photoshop to it's original settings, you want to reset the Preferences.
To do this, just before you double-click the .EXE file (to start Photoshop), hold down the SHIFT + CTRL + ALT (or Mac equivalent) buttons. You'll get a pop-up, asking if you want to reset - then Photoshop should start fresh.
As for the text, you have an option to set the size of the type along the top of the screen.

With the question on the moving of objects I believe you have the option "Show Transform Controls" selected when using the Move Tool. That's why it looks like the free transform is surrounding the object. If you choose the Move Tool, at the top you'll see the option to deselect it.
