I have found that the best way to learn about printing (if you aren't able to get a job at a printing press) is to print a LOT of your work.
If the colours constantly change when you print your work, maybe your output colour settings aren't set properly. You always want to design your peice in CMYK if the intent is to print, and then you may have to adjust your colour outputs depending on the colours of the work itself. This is especially true when preparing work for gang runs.
There are a ton of small print shops out there that can run up a full colour copy for under a buck. Just my 2 cents.
