to be honest, nowadays it doesn't really matter which program you use. They can all pretty much handle organic modeling. I find 3d programs now are pretty much tools. It's usually up to the artist to do what he can with the tools, tee hee hee...i said tools, TWICE!

anyways...I personally use maya but I think you can use anything you feel comfortable with... If money is an issue, you can use demo's or free programs like blender, wings3d, or what not... I think there's a thread on free programs here so swing by there...
